"Oven Fried" Buffalo Chicken AKA How to Make My Husband Happy


For the last few months, I've enjoyed reading my friend Andrea Leigh's recipes every Tuesday in her "Tuesdays at the Table" feature. Since I've decided to bring my recipes over here instead of posting on my cooking blog (which I have abandoned due to lack of frequency and lack of originality), I figured that I would take part Tuesdays at the Table this week.
**Buffalo Chicken**
Chicken Breast Cutlets
Ranch Dressing
Cheddar Cheese, Shredded
1 egg, beaten
Bread Crumbs
Hot Sauce (I use Frank's)
Garlic Powder
Salt
Crushed Red Pepper
I didn't give you any measurements because this is a dish that you can alter to suit your own tastes. And, let's be honest, I usually never measure anything.

1. Place chicken breasts in a ziplock bag with enough ranch and hot sauce to cover them. Refridgerate for atleast 30 minutes.
2. Preheat oven to 400 degrees.
3. On a plate, mix bread crumbs, salt, garlic powder and crushed red pepper.
4. In a small bowl beat the egg.
5. Dip the chicken in the egg mixture and dredge in bread crumb mixture. Place on a well greased baking sheet.
6. Bake for 25 minutes or until chicken is cooked all the way through.
7. Top with shredded cheddar

*Optional, but strongly recommended, serve with garlic cheddar biscuits.

**Garlic Cheddar Biscuits**2 cups baking mix
2/3 cup milk
1/2 cup shredded mild cheddar cheese
1/4 cup butter
1/4 tsp. garlic powder
parsley flakes

1. Preheat oven to 450 degrees.
2. In a medium-sized bowl, combine baking mix, milk and cheddar. Mix until incorporated.
3. Spoon onto a lightly greased cookie sheet.
4. Bake for 8 - 10 minutes.
5. Place butter in a small dish, microwave 30 seconds or until melted. Add garlic powder and parsley. Pour mixture over hot biscuits.
Apparently, on the night that the above picture was taken, I didn't feel the need to serve anything that is actually healthy. I am so ashamed.
