Isn't that kind of an ugly name..? I think it is. And, unfortunately, it doesn't look very pretty either (but my pretty Lenox dessert plates help it, right?). But the good news is that this dessert is so yummy (and super easy!)! Apparently this is a popular dessert but until recently I had never even heard of it! I made it on Sunday when I made a big meal for Cody's family for the first time. I got this recipe from our sweet, sweet deacon at church Mary Virginia. She is always doing sweet things for us like giving us boxes of candy, sending us cards and taking us out to eat. Living far away from your family is a little easier when you have a church family as wonderful as ours.
1 can cherry pie filling
1 can crushed pineapple, drained
1 box yellow cake mix
1 cup butter, melted
1. Preheat oven to 350 degrees. Lightly grease cake pan.
2. Layer cherry pie filling and pineapple in bottom of pan.
3. Top with cake mix, spreading evenly.
4. Pour the melted butter on top and bake for 35-45 minutes!
Now isn't that simple?? Now when I made this, I used 1/2 the amount of butter. To compensate for some of the moisture I lightly stirred the top layer (cake mix) into the other ingredients. I did this about half way through the baking. I also left some of the juice in the pineapple. The good thing about this recipe is that you can pretty much do whatever you want!
