've really been trying to eat more healthily these last few weeks.
One thing, though, that I am still really craving is Mexican food.
Seriously, every time C and I discuss going out to eat I always suggest Mexican.
My mother-in-law went on a diet in January (and looks great, by the way!)
and completely stopped eating Mexican (which was her favorite, too!).
Just like that.
Cold turkey.
I'm not sure I am ready for that big of a committment.
But what I can do is make restaurant-style meals at home
so that I can limit the amount of fat that is used.
And let's be honest, you can't have Mexican food without the salsa and guacamole.

Guacamole is one of my favorite foods but in the past I've always eaten it in restaurants instead of making it myself. Who knew it was so easy??
Guacamole
3 medium-sized avocados, scooped out and mashed
1 lime, juiced
2 tablespoons cilantro, chopped
1 teaspoon salt
2 roma tomato, seeded and diced
garlic powder, to taste
cayenne pepper, optional
1. In a medium bowl, mash together the avocados, lime juice, salt and garlic powder.
2. Mix in cilantro and tomatoes.
3. Refrigerate 1 hour to allow flavors to marry.

Just-Like-Chili's Salsa
1 (14 1/2 ounce) cans Rotel, drained
1 (14 1/2 ounce) cans diced tomatoes, drained
4 teaspoons diced jalapenos {plus more if you like it spicy!}
1/4 cup yellow onion, diced
1/2 teaspoon salt
3/4 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon sugar
1. Add both cans of tomatoes in a food processor and pulse.
2. Add jalepenos and onions.
*For extra flavor, throw both on a George Foreman grill for a minute or two before blending with tomatoes. In food processor place jalapenos and onions.
3. Add salt, sugar, and cumin. Process all ingredients until well blended but do not puree.
4. Chill for atleast an hour to allow flavors to marry.

I'm sooo not good at making anything these days, but I do love guacamole...I may have to try this :)

ReplyDeleteOh i was using yogurt instead of mayonnaise in almost all of my salads. And it tastes AMAAAAAAZING!
ReplyDeleteBut i never tried the guacamole...it sounds like something...but just tomato, avocado and spices ??.. it's kinda weird tasting in my mind...but i may give it a try for real sometime soon.
