The {Tropical} Green Monster

Guess what I made yesterday...? A drink...out of spinach. Crazy, huh? Actually it was really good and it made me feel really great! You're skeptical, right? So was I when I first read about it on Oh She Glows! But then I saw on The Green Monster Movement that lots of people are doing it - and loving it - so I had to try it.

I've seen tons of variations online but here's what I did for my first one....

Tropical Green Monster1 mango
3/4 cup [uncooked] baby spinach
ice cubes
3/4 cup unsweetened Almond Breeze
little drizzle of agave

I blended it all together in my Magic Bullet, poured it into my maragarita glass [I don't drink margaritas so this shall henceforth be known as the Green Monster glass] and enjoyed. Cody wouldn't even try it but Tifi seemed to love it.
I drank it before heading to the Tuesday night Bible Study that I teach and it definitely held me over until I got home...3 hours later.

Today I think I'm going to try a Strawberry Banana Green Monster.

Besides Oh She Glows, another blog that I am loving [and getting TONS of great healthy food ideas from] is Fitnessista. I got the ideas for breakfast cookies and healthier guacamole from her!

  4. Hmm...this sounds interesting. I think I'll pass the recipe on to my husband for him to try. Sounds like something he'd really like. I'm not sure what Almond Breeze is though. Thanks for sharing!

  5. OMG! I am SO gonna try this! It sounds sooooo yummy! Matthew is like repulsed by spinach, but I love it.

    So, I was telling me friend about Green Monster and she was telling me that she has stopped eating meat, which reminded me of when you stopped eating meat in high school and I did it too, for support. Do you remember that? And then you told me you had eaten a double cheeseburger from McD's? LOL! Good times, good times.
