Football Craziness and the Very Ugly Brownie

A couple of weeks ago, craziness came into our household...

Fantasy Football season began.

Watching football is one thing. In the past two years of being with C, I have become accustomed to not having access to the tv on Saturdays, Sundays, Monday nights and Thursday nights (but only after the Office!) throughout the fall. I can spout off all of the teams in the SEC ("the best conference," of course)and I can tell you which teams "we" hate. I've learned how to handle Cody's bad moods when if LSU loses.
But participating in Fantasy Football is quite another thing. I'd like to think that I'm no idiot when it comes to real football but I've still not got it quite down how this whole fantasy league works. I [try to] pretend like I know but really I have no idea. So, I provide the kind of support in which I am competent. I bake.

 I set out to make some snacks for C and his friends to have while they had their draft. I pulled out my old faithful -the family brownie recipe that my mom gave me last year - only to find that I was missing a few ingredients. No problem, I'll just improvise...

Dark Chocolate Butterscotch Bavarian Creme Brownies
(AKA The "Use What You Have" Brownies)

2 eggs, beaten
1/2 teaspoon baking soda
1 stick butter
1/2 cup brown sugar (this plus the demerara is in place of 1 cup white sugar)
1/2 cup demerara sugar
1/2 cup all-purpose flour
3 tablespoons dark chocolate cocoa powder (this plus the jersey cocoa is in place of all regular cocoa)
3 tablespoons jersey cocoa powder
1/4 teaspoon Bavarian Creme Flavoring (in place of 1 tablespoon vanilla)
1/2 cup butterscotch chips (my addition)

1. In a medium size bowl, melt butter. Add cocoa powder and stir.
2. On a medium speed beat in remaining ingredients (except chips).
3. Stir in butterscotch chips.
3b. {I didn't do this but it probably would have helped} Before you add the chips, put them in a bag with a little bit of flour and shake them. This will help them not sink to the bottom of the brownies.
4. Bake at 350 degrees for 17-22 minutes.

Notes: This recipe doesn't make that many brownies, so if you need to feed a big crowd, you should probably double the recipe. These brownies are probably served better in a dish with ice cream or whipped cream on top instead of cut into squares. As tasty as they are, they don't cut out very prettily. Basically, they just aren't very pretty all together. They came out a very dark color, almost black probably due to the combination of the demerara sugar and the dark chocolate. But they were delicious and (I think) appreciated by the football-obsessed boys.

  7. Thankfully my boyfriend has stated that he has no time for fantasy football.

    Otherwise I have a feeling we'd BOTH be doing the league since we're super competitive with each other and as a team against others. lol.
